Yours truely still having packs of dates leftover from Zulhijjah 10 days fasting plus packs sent by someone in Makkah thru my aunt when she's back from hajj last month. There was times when we did not have dates on the shelves as of nowadays, my mom used to keep stock from Ramadhan to last for few months. She used to take out from the container and dry it off under the hot sun, then dates look good and nice to eat again. She made cakes too. Here is something I tried hard to recall, then managed to documented in metrics!
240 g plain flour
1 1/4 tsp baking powder
1 tsp soda bikarbonat
220 fine granulated sugar (I substitute with light brown sugar)
20pcs dates - deseeded and sliced
200 ml fresh milk ( my mom used fresh cow milk!)
200ml oil ( yes... cooking oil)
3 large eggs
200 ml warm water
Soak sliced dates in milk for at least 1 hour until milk turn brown in dates discoloration. Sift flour, bp and sb together then add in sugar and mix dry ingredients evenly. Pour in warm water and stir. Beat eggs then add into the mixture and continue mixing with wooden spatula. Add in vanilla and salt. Put milk and dates into tight drinking Tupperware tumbler and shake vigorously then pour into mixture followed by oil. Blend well and put into 8" pan.
Bake or steam for approximately 1 hour.

7 pcs bird chillies -chopped
10 garlics ( put aside 3 pcs - chopped)
1 bulb big union
1 big tomato - quartered
3 pcs preserved plum
garnishing - green union- chopped
Steam the fish with 7bulb of garlics, chopped ginger, chillies, preserved plum, salt and sugar.
When it's done, take out clear soup from the fish and put aside.
Saute chopped garlics until fragrants. Pour in the soup, add lime and fish sauce and bring to boil. Add hot water if the soup is too thick. Put in tomatoes and big union ( and chopped cucumbar- option) and simmer for 2 minutes. The soup should taste sour, sweet, salty and hot!
Arrange fish in shallow plate, then pour in the soup together with all veggeies.
1 kg large squid (app. 6-8 inches long)
5 cloves garlic - crunched finely
2 tbsp light soy sauce
1 tsp dark soy sauce
1 tbsp black pepper corn - pound finely
salt , light brown sugar
3 tbsp honey
1 lime - squeezed for juice
red chilly or capsicum- sliced thinly
Garnishing: green union & parsley - shredded
Cut squid into 2. Use sharp scissors to cut each edges at interval of 1cm - this help each pieces to open up like flower.
Season and marinate squid with all ingredients for 5 minutes. Heat the non-grease pan, work with big fire. Put in squid.( I cook the tentacle first, as it's easier to work on the flower later. Dish out cooked tentacles then put in the slices into hot pan). Stir evenly and turn squids to have the edges down so good petals can form up better flower. Season to your taste and ready to serve.
